This summer, the bar at the newly opened Blue Butcher presents two classic drinks from America: the mint julep ($125) and apple pie moonshine ($110). The former brings the signature drink from the Kentucky Derby to Hong Kong that’s a combination of whisky, mint and crushed ice while the latter is a re-interpretation of the illegal homemade alcohol that abounded during Prohibition.

This swanky cocktail bar has recently revamped its cocktail menu to include a special selection of “new classics,” featuring exotic and original cocktails such as the pisco sour ($110), infused with a dash of lime juice, simple syrup, egg white and bitters. Or try the show-stopping Cloud de Jalisco ($130), a daiquiri-like drink combined with maraschino and fresh grapefruit juice and topped with a hint of elderflower mousse and chartreuse mint.

For something with serious fire power, have a sip of Brickhouse’s newly created Mexican drink, the Cubano ($115). This summer cocktail is a mix of tobacco-infused reposado and mescal with a hint of lemon and vanilla and a pinch of volcanic salt on the rim.

Beat the sweltering heat with a refreshing cocktail at Mamoz. A medley of sizzling new summer cocktails made its debut in July, and among them is the Acid Rain ($125), a strong vodka cocktail mixed with citron vodka, kaffir lime leaves, a hint of lemon bitters and dry cherry liqueur. Also try the sweet Butter-Corn Julep ($98), a re-interpreted version of the classic mint julep infused with a shot of caramelized homemade buttered corn-flavored bourbon.

In hopes of offering an exotic drinking experience with both European and Asian touches, bar manager Pietro Didio boldly uses ingredients like pomelo, grapefruit, cardamom seeds and honey yuzu mixed with gins from Britain and Japan. Among the six new G&T summer mixes is the Spicy & Ginchy, which uses peppercorns to enhance the spicy tanginess of the Hendrick’s gin. All of the six drinks are $140 per glass.

Belvedere ambassador Allison Dedianko and sommelier Leo Au are the people behind the Belvedere multisensory vodka cocktails available here from now until September 30. For vodka and cocktail enthusiasts alike, the Black Raspberry Royal, a mixed cocktail comprising pineapple juice, raspberry liqueur and sparkling wine infused with decadently red gel pearls, is a must-have. If you’re hankering for something zesty with less alcohol, the Chamo-tini—made with Belvedere citrus, chamomile tea, lemon juice and honey served in a martini cup topped with foam—could just be your cup of tini. All the vodka drinks are $158 each.
