Reviews of the eateries in this dining destination mall will start appearing habitually in this mag during the coming weeks. Our first pick at The One is Teochew with a view—a drop dead gorgeous twentieth floor Victoria Harbour vista, to be precise. The capacious venue is all modern Chinese resto in minimalist white. To start, we ordered slices of braised goose, nothing to complain about, and a plate of prawn and crab balls, which had a comforting texture—although it had noticeable bits of lard in them. Their Teochew-style mini-oyster rice soup wasn’t impressive either (could've been zhuzhed up with a lot more cilantro and scallions), but we couldn't stop eating the deep-fried squid, enveloped in a light, cobweb-like batter speckled with robust black pepper, and the stir-fried kailan with crunchy dried fish flakes. And we loved the earthenware pot of soy sauce chicken, velvety and flavorful with shallots. As Teochew finer-dining geared towards banquets, the wait staff was certainly attentive enough to remember which specific tea to pour to which diner on the table. Definitely a place to return to if one is craving Teochew without rude waiters and triad dai lows cussing loudly at the next table.
